Preparation Instructions:
Step 1
Thaw avocado spread according to package instructions.
Step 2
In a food processor, combine the cream cheese, 4 oz. sun-dried tomatoes, and salt and pepper until will combined. Set aside for service.
Step 3
For each portion, cook 4 fl. oz. beaten egg (2 eggs) on a griddle until set. Season to taste. Hold warm. Lay a lavosh wrap on a work surface. Spread with 2 oz. of the sun dried tomato spread leaving a 1-inch border at the top edge. Place cooked eggs on top. Add 1/2 cup spinach leaves, 1/2 oz. feta, and 1/4 oz. chopped sun dried tomatoes in oil. On the side closest to you add 2 oz. avocado spread lengthwise. Roll lavosh up and place seam side down on the griddle to lightly toast. Flip wrap over to toast on opposite side. Cut in half and serve immediately.
