Sweet Chili Chicken Thai Fried Rice

This sweet and spicy fried rice features Simplot Good Grains™ Thai Style Red Quinoa & Vegetable Blend instead of rice for something delicious—and a little different.
Preparation Instructions:
Step 1
Heat 1 fl. oz. of the oil in a large wok over high heat. Add chicken and sauté until chicken is cooked through. Remove from wok and set aside. Add egg, stir continuously until egg is scrambled and in small pieces. Remove from wok. Wipe out wok.
Step 2
Heat 2 fl. oz. of the oil in wok over high heat. Add in grain blend and cook while constantly stirring. When rice is hot and has some light crispy texture, return cooked chicken and egg to pan. Add soy sauce and stir well. Add in sweet chili sauce, and stir until incorporated. Garnish with cilantro and lime wedges.
