Loaded fries are always a crowd-pleaser, and these are extra-special with housemade Secret Sauce, caramelized onions, and melty cheese. Yum!

Secret Sauce: (Makes 2 Quarts)

Ingredient	Weight	Measure
Mayonnaise, low-fat		4 cups
Ketchup, low sodium		1 1/3 cups
Sweet pickle relish		1 1/3 cups
Yellow mustard		1/2 cup
White vinegar		1/2 cup
Paprika		1 tsp.

Animal Style Fries:

Simplot Tater Pals™ Fries: Ovenable Straight Cut French Fries	10 lbs.
Simplot Simple Goodness™: RTE Caramelized-Style Onions	1 lb. + 8 oz.
Cheese sauce, reduced sodium, 3 oz. = m/ma	2 lbs. + 6 oz.
Secret Sauce (recipe above)		2 cups + 2 1/2 Tbsp.

Preparation Instructions:

Step 1

Make the sauce. In a medium bowl, combine all ingredients and whisk.

Step 2

Preheat oven to 400°F.

Step 3

Arrange fries in a single layer on two full-size sheet pans.

Step 4

Bake for 10-12 minutes until golden and crisp.

Step 5

Prepare onions. Preheat oven to 325°F.

Step 6

Spray sheet pan with pan release. Arrange onions in a single layer on pan.

Step 7

Heat for 8-10 minutes. Remove from oven and stir.

Step 8

Prepare cheese sauce according to manufacturer's directions.

Step 9

Serve 1/2 cup fries to each customer. Offer choice of a #30 disher of caramelized onions and/or a #60 disher of cheese sauce. Offer a #100 disher of secret sauce as a condiment (pre-portioned recommended).
