We took a quintessential Hawaiian comfort food dish and made it into a bowl featuring cauliflower rice, peppers and onions, and seared ground beef. Topped off with brown gravy and served with sweet potato salad and a fried egg. Aloha!
Preparation Instructions:
Step 1
For the Sweet Potato Salad; prepare sweet potatoes according to package instructions. Chill. In a mixing bowl, combine sweet potatoes, mayonnaise, vinegar, celery, and scallions. Stir until well combined. Season with salt and pepper to taste. Reserve cold.
Step 2
Season and cook hamburger patties. Reserve hot. Prepare peppers and onions and riced cauliflower according to package instructions. Reserve hot. Prepare eggs, fried sunny-side up. Reserve hot.
Step 3
For each serving; portion 3/4 cup riced cauliflower into a serving dish. Top with 4 oz. peppers and onions and place burger patty over vegetables. Pour 4 fl. oz. brown gravy over everything. Scoop 1 cup of sweet potato salad alongside the other ingredients. Top with 1 egg and 1 Tbsp. parsley.
