Corn tortilla topped with scrambled eggs, black beans, shredded cheese, and flame-roasted sweet potatoes. Served with salsa on the side.
Preparation Instructions:
Step 1
Prepare sweet potatoes and black beans according to package instructions. Reserve hot.
Step 2
For each serving; place corn tortilla in serving container and top with 1/4 cup black beans and 1/2 cup sweet potatoes. Finish with 1/2 cup of scrambled eggs and 1/4 cup cheese. Serve with 1/4 cup of salsa.
