Meal Components: 2 oz. eq, meat/meat alternate, 1/2 cup red/orange vegetable, 1/2 cup dark green vegetable and 1/4 cup fruit
Preparation Instructions:
Step 1
Preheat oven to 400° F. Prepare the sweet potatoes, broccoli and turkey according to package instructions. Place ingredients in warmer and hold for service.
Step 2
Transfer the sweet potatoes into four 2-inch steam table pans. Add 14 oz. of dried cranberries to each pan. Cover.
Step 3
For service; place 1/2 cup of sweet potatoes and cranberries in a bowl, using a #8 disher. Add 1/2 cup broccoli. Top with 4 oz. of turkey and gravy using a 4 oz. spoodle.
