These "customizable" little avocado toasts work for breakfast, lunch, or as a shared appetizer. Let your patrons choose from a list of tasty toppings.

Avocado Toast:

Ingredient	Weight	Measure
Simplot Harvest Fresh® Avocados: Chunky Avocado Pulp, Frozen, thawed	32 oz.
Simplot Traditional Potatoes: Tiny Triangles	5 lb.

Toppings:


Arugula	3 oz.
Bacon, cooked, diced	6 oz.
Cheddar cheese, shredded	8 oz.
Cranberries, dried	12 oz.
Golden raisins	10 oz.
Hard-boiled eggs, chopped		4 each
Raisins	10 oz.
Tomatoes, diced	12 oz.

Preparation Instructions:

Step 1

Thaw avocado according to package directions. Prepare the Tiny Triangles according to the package directions. Top each with 1/2 oz. avocado.

Step 2

Top off each avocado toast with preferred toppings.
