Elephant Ear Waffle Fries

An easy late-night snack or dessert that resembles the nostalgic fried dough treat we remember from the fair. Load up a plate of crispy Maple City® Waffle Flavored Waffle fries tossed lightly in cinnamon sugar and use as a base to serve two ways. The house-made créme anglaise style-sauce pairs well with raspberries and lemon, or with chocolate sauce and chopped macadamia nuts.
Preparation Instructions:
Step 1
Set fryer to 350°F.
Step 2
To prepare crème anglaise, combine milk, heavy cream, and vanilla bean paste in a pot and bring to a simmer over medium heat. Whisk egg yolks and sugar in a bowl to combine. Slowly pour hot milk mixture into yolks and combine. Return entire mixture to pot and whisk over low heat until custard thickens (about 5 minutes). Strain into a bowl, cover, and chill for at least 30 minutes before serving.
For optional fruity version, separate half of crème anglaise and add lemon juice and zest, then chill.
Step 3
Combine cinnamon and sugar in a large bowl.
Step 4
Prepare waffle fries to according to package instructions and toss in cinnamon sugar mixture. Place fries on serving dishes.
Step 5
For chocolate version, drizzle fries with crème anglaise, chocolate sauce, and sprinkle with macadamia nuts and coconut.
For lemon version, drizzle fries with lemony créme anglaise, sprinkle with raspberry crumbles and lemon zest.
