Egg and Potato Bites

These savory little bites are fluffy, light, and perfectly portioned for breakfast or a healthy snack on-the-go. Packed with protein, grains, Fuji apples, roasted sweet potatoes—and flavor!
Preparation Instructions:
Step 1
The day before service, thaw apples, sweet potatoes, and ancient grains blend under refrigeration overnight.
Step 2
Preheat convection oven to 275°F or conventional oven to 300°F.
Step 3
Slice apples into 1/2-inch wide pieces and cut sweet potatoes in half.
Step 4
Combine apples, sweet potatoes, and ancient grains blend in a bowl.
Step 5
Place eggs, cottage cheese, Parmesan cheese, cornstarch, and pepper in a food processor or blender and blend until smooth.
Step 6
Spray a muffin pan generously with pan release.*
Step 7
Pour 1/4 cup egg mixture in each cup. Using a #30 disher, top each cup with 2 Tbsp. of the fruit and veggie mixture.
Step 8
Place muffin pan in a cake pan or sheet pan. Pour water until it comes up about 1/2 way up the muffin cups.
Step 9
Bake at 300°F for 20-25 minutes or until set. Let rest 10 minutes, then remove from pan.
*Recipe can also be prepared as a frittata. Spray a 2-inch deep steam table pan with pan release. Add egg mixture, then stir in apples, sweet potato, and kale blend. Bake at 375° F for 35 minutes.
