Refreshing, vegan, and featuring a super-simple ingredient list—this chia and fruit pudding is an excellent choice for breakfast, a mid-day snack, or as a healthy dessert option. It’ll be an excellent addition to your grab-n-go menu!
Preparation Instructions:
Step 1
Thaw mango according to package instructions. Hold refrigerated.
Step 2
In a medium pot, combine raspberry crumbles, sugar, and lemon juice. Bring to a simmer over medium heat, stirring often. Reduce heat and continue to simmer until thickened, about 15 minutes. Allow mixture to cool and transfer to a non-reactive container, cover and refrigerate for service.
Step 3
In a medium bowl, combine coconut milk, chia seeds, agave syrup, vanilla and mango cubes. Stir thoroughly to combine. Cover and refrigerate at least an hour, or overnight. Stir occasionally to break up any clumping.
Step 4
For each portion, spoon 3/4 cup (6 1/2 oz.) pudding into a serving container. Top with 1/4 cup (2 oz.) raspberry sauce, and 1/4 cup granola.
