California Cauliflower Sushi Bowl

A flavorful bowl made with creamy sushi-style cauliflower rice, surimi, avocado and vegetables. Top it off with a sriracha mayo drizzle and serve with a soy dressing on the side.
Preparation Instructions:
Step 1
Thaw the avocado according to package directions. Prepare cauliflower rice according to package instructions and allow to cool.
Step 2
Combine rice vinegar and sugar until dissolved. Add to softened cream cheese until incorporated. Fold in cauliflower rice until mixed together. Hold at room temperature.
Step 3
Combine the soy sauce, ginger and garlic. Hold for service. Whisk sriracha and mayonnaise until combined, place in squeeze bottle and hold for service.
Step 4
For each portion, place 6 oz. prepared cauliflower rice in a serving bowl. On top of the cauliflower, arrange 1 oz. flaked surimi, 1/2 oz. julienne cucumber, slices from 1/4 avocado, and 1/2 oz. sliced radish. Drizzle with 1/2 fl. oz. of sriracha mayo and some Furikake seasoning. Serve with 1 fl. oz. soy dressing on the side.
