You’re seriously missing out if you haven’t tried Bao buns. This savory breakfast version features scrambled eggs, sweet potatoes, dill pickle avocado spread, sliced serranos, and caramelized onions. They're a little different, a little spicy, and incredibly tasty.
Preparation Instructions:
Step 1
Thaw avocado spread according to package instructions.
Step 2
Prepare roasted sweet potatoes and caramelized onions according to package instructions. Hold warm for service.
Step 3
Steam buns according to package instructions. Hold warm.
Step 4
For each bun, spoon 1 oz. prepared scrambled egg and 1 oz. sweet potatoes into the center. Top with 1/4 oz. pickled onion, serrano slices, and 1/2 oz. avocado spread. Garnish with fresh cilantro. Serve with 3/4 oz. caramelized onions on the side.
