Bacon Pimento Cheese Bites

Step 1

Thaw dill avocado spread according to package instructions.

Step 2

In the bowl of a food processor, add cheese spread, cream cheese, pimentos, and sriracha. Process until combined. Transfer mixture to a bowl and stir in cheddar cheese.

Step 3

To prepare the Bacon Jam, place bacon in a sauté pan and cook over medium heat for 3-4 minutes or until most of the fat has rendered. Add caramelized onions and cook for an additional 4 minutes. Add sherry cooking wine to deglaze the pan. Reduce heat to low, add ketchup and allow to simmer for 15 minutes. Refrigerate for at least 30 minutes before use to allow bacon jam to form.

Step 4

Prepare waffle fries according to package instructions.

Step 5

To build each bite, use a large waffle fry as base and spread with Bacon Jam. Use a slightly smaller fry and spread with pimento cheese, place on stack with cheese facing up. Cover another waffle fry with dill avocado spread and add to top of stack. Use a toothpick to hold bites together and top each with a piquillo pepper.
