Ahi Poke with Avocado Rice Bowl

Start with a base of Good Grains™ Thai Style Red Quinoa & Vegetable Blend, add marinated chunks of fresh Ahi tuna, sliced avocado and a sesame-soy dressing. What do you have? A fresh, filling and delicious lunch!
Preparation Instructions:
Step 1
Thaw avocados according to package instructions. Refrigerate for service.
Step 2
Prepare quinoa blend and edamame according to package instructions. Hold warm for service.
Step 3
In a medium sized bowl, stir together the ahi tuna, sliced shallots, green onions, soy sauce and sesame oil. Season with Hawaiian salt to taste. Allow mixture to marinate at least 10 minutes. Refrigerate for service.
Step 4
For each portion, scoop 8 oz. quinoa blend in a serving bowl. Top with 5 oz. ahi poke and 1/4 avocado, sliced. Drizzle with 1 fl. oz. Poke sauce. Serve with 4 oz. whole edamame seasoned with coarse sea salt, on the side.
