Crispy gluten-friendly prawn pops on a fresh Asian noodle salad.

Ingredients:

1kg frozen I&J®: Battered Prawn Pops
1kg cooked vermicelli rice noodles
150g thinly sliced red capsicum
300g finely shredded savoy cabbage
200g julienned carrots
60g thinly sliced spring onion
30g thinly sliced red chilli
15g each fresh coriander leaves & Thai basil leaves
300ml Vietnamese dressing, for serving

Instructions:

1. Cook frozen I&J Prawn Pops following packet directions.

2. Toss together salad ingredients.

3. Thread prawn pops onto skewers. Top salad with skewers and fresh herbs. Serve with dressing on the side.
